Caribbean Breakfast with Fried Salted Fish
I remember as a kid eating this meal
as one of our Sunday's
morning breakfast feast
after we get back from church.
Ingredients
1 pack of dry salted fish
1 Onion
4 Garlic heads
Vinegar
1 tbsp of green seasoning
1 medium Tomato
1/2 of a lime/lemon
Prep
Soak fish in hot water with 1/4 cup of vinegar
Finely chop onion,garlic and tomato
Cooking
Place fish in a pot cover with warm water
Boil until water turns white with foam
Remove from heat
Discard water
Place fish back in the pot and cover with warm water
(to remove excess salt)
Boil for an additional 20 minutes
Remove from heat and rinse under cool water
Place in a bowl and shred
Heat 1 tbsp of oil in a large skillet
Add onions,tomato and garlic
Stir occasionally
Cook on medium heat until onion
is caramelized or slightly brown
Add fish and stir
Add 1/2 of a squeezed lime
Cook for 10-15 minutes on low heat
In the Traditional Caribbean culture
this recipe is served for breakfast with fried bakes.
