How to Cook Caribbean Brown Stew Chicken

Ingredients:

4 chicken quarters

2 tbsps of Green seasoning

2 tsps of Burnt sugar

1 can of tomato sauce

All ground spice

Seasoning salt to taste

1 1/2 cup of water

2 teaspoons of wet jerk seasoning

3 tbsps of granulated /brown sugar

2 pinches of salt

1 tbsp of olive oil

Vinegar

Chicken Prep

Add 2 tbs of green seasoning

Add 2 tsp of wet jerk seasoning

Add 4 dash of seasoning salt

Add 2 dash of all ground spice

Mix and spread seasonings

evenly throughout the pieces of chicken

You may use your clean hands to rub it in

Let it sit for 15 mn or refrigerate

for cooking at a later time.

Cooking

Heat 1 tbsp of olive oil in a large skillet

Add pieces of chicken slowly

Stir and allow it to simmer for 15mn

stir occasionally

Add burnt sugar and stir to spread evenly

Add sugar and stir

Cook covered for 20mn on medium fire 

Stir occasionally

Taste to make sure sugar has covered

the slight bitter taste of the burnt sugar

Make sure all the pieces of chicken

are brown on both sides

Add tomato sauce and stir evenly

Add water to cover the chicken

Stir and cover

Cook for an additional 25mn

until the majority of water evaporates into a 

slightly thick gravy. 

This chicken recipe be served with

your choice of white rice or pasta
