How to Cook Smothered Chicken Thigh: in Homemade Tomato sauce
Ingredients:
1 pack of boneless chicken thighs
1 Onion
1 Large tomato
3 sprinkles of Garlic and Pepper Seasoning
1-2 sprinkles of Seasoned salt
Onion powder
2-3 tsps of tomato paste
1 Hot red pepper (optional for flavor)
1 tbsp Olive oil
1/3 tsp of wet jerk seasoning (optional for flavor)
1 tsp of green seasoning.
Prep:
Finely chop or dice tomato and onion
I used my Vidalia ChopWizard to chop my onion and tomato.
Marinate chicken:
Remove the white strings from the chicken
Add 1/2 cup of vinegar
Add water to cover and soak the chicken for
1 minute
Rinse under cool running water
Lightly sprinkle the dry seasonings
to cover your chicken
Add 2 tbsps of green seasonings
Cooking:
In a large skillet, heat oil
Add chopped onions, tomatoes and
green seasoning
Stir
Add tomato paste and stir on medium heat
Add marinated chicken
Stir to combine all vegetable with the chicken.
Cook for 15 minutes covered stir occasionally
Add 2/3 cup of water
Stir and allow to simmer for an additional 20-25 minutes covered.
Stir, sauce should be thick and red in color.
Can be served with rice, potato, vegetables,
or macaroni.
