Vegetarian Potato Curry

Caution: This dish is SPICY/HOT.

Ingredients


2-3 tsps of Mild Curry Powder


2 tbs of Green Seasoning




2-3 potatoes pealed and diced




1 tbs of Vegetable/olive oil



Water to cover potatoes

Preparation

  1. Cut potatoes into small cubes
  2. Soak in cold water to prevent discoloration
  3. Set aside
  4. In a glass bowl (to prevent stains) add curry and water
  5. Mix curry with water to form a thickened liquid mixture
  6. Set aside


Cooking Curry


  1. In a med/large skillet heat 1 tbsp of oil
  2. Add 1 1/2 tbsp of green seasoning
  3. Stir for 2 minutes on medium heat
  4. Add curry mixture and stir on low heat
  5. Let it simmer for 20mn until gravy is thick
  6. Add potatoes and cook for an additional 20 minutes on low heat
  7. And potatoes are soft to the touch
  8. Cook on medium heat until gravy is formed
