The recipe that I choose to prepare today is suitable for most diets. I turned on my"Chef Thinking Cap" and came up with the following delicious recipe , which I will be serving it for brunch.
You will need the following ingredients:
1 -1 1/2 cup of grilled chicken breast cubes
1/2 cup of fresh finely chopped spinach
Grated cheese of choice
1/3 Piece of finely chopped red bell pepper
1/3 Piece of finely chopped green bell pepper
1 can of mixed corn with bell peppers
Cooking spray of your choice
Garlic Salt
Seasoning salt
Green seasoning
Prep:
Cut one chicken breast into small cubes
Presoak them in a bowl of water and vinegar for a few
minutes or until it is defrosted
Rinse under cool water
Add all dry seasoning and salt to taste
Use a spatula or your clean hands to massage the
seasonings into the chicken
This will allow the pieces of chicken to absorb all those
corn to a boil on low to medium heat.
Preheat 1 1/2 teaspoon of olive or vegetable oil on high
in a stove top skillet
P.s** you can use a frying pan as a substitute if you do
not have a stove top skillet.**
Place the pieces of chicken in the skillet
Turn down the heat to medium
Remove the corn from the heat once it starts to simmer
and juices are slightly evaporated or reduced.
Flip the chicken pieces repeatedly to prevent them from
en until they are fully cooked and brown with visible grill
markings.
